1 pound breakfast sausage

2 cups shredded sharp cheddar cheese
1 cup biscuit baking mix
2/3 cup milk

1. Preheat the oven to 375°F and lightly grease a 24-cup mini muffin pan.

2. In a skillet over medium heat, cook the sausage until browned and fully cooked, breaking it into small crumbles. Drain off any excess grease and let it cool for a few minutes.

3. In a mixing bowl, stir together the cooked sausage, shredded cheddar cheese, biscuit baking mix, and milk until everything is evenly combined into a thick, scoopable mixture.

4. Scoop the mixture evenly into the prepared mini muffin cups, filling each nearly to the top and gently pressing the mixture into place.

5. Bake for 18 to 22 minutes, or until the tops are golden brown and the cheese is bubbly. Let them rest in the pan for 5 minutes before removing and serving warm.

Variations & Tips

For picky eaters: Try using mild cheddar instead of sharp cheddar for a gentler cheese flavor. If your family likes a softer texture, let the cups cool just a bit before serving so the centers can set up nicely.

Make-ahead tip: Cook the sausage a day ahead and keep it refrigerated, then mix and bake the cups when you need them. You can also bake them fully, cool them, and rewarm in a low oven before a party.
